Farm Wide Update: All Things Hillside! 🌱

Major Milestone Alert 🎉 Carriageworks Farmers Market 👩‍🌾

In our last newsletter, we mentioned we might be joining a Sydney farmers market soon. We are absolutely thrilled to announce that we’ve joined the Carriageworks Farmers Market in Sydney!! 😁

We’ll be there fortnightly (every 2nd and 4th Saturday of the month). To get started, we’re focusing on bringing our delicious pasture raised pork to the market - our ‘Unusual Cuts’ range has created quite a stir! It seems there are just not enough ears, tongues and trotters on a pig 🤣🤣

It’s amazing to think that Farmer Liz started farming full-time just 3-months ago. We are so incredibly grateful for the opportunity and have absolutely LOVED the two markets we have attended so far.

🚚 More Consistent Deliveries 🚚

Since we’re now processing pigs every 2x weeks, you’ll get your pork orders much faster. We’ll be introducing a regular delivery day for each delivery region and clear cut offs for delivery that week.

🥓 🥓 The Bacon Trial 🥓 🥓

We’re always getting asked when we’ll be doing bacon. The answer is: soon. Our trial run of Nitrate-Free Bacon AND Nitrate-Free Ham is ready and we’ve just had a chance to try the bacon so far and we’re so stoked. It’s delicious. Now to try the ham 😋

We won’t have much to start off with so we don’t expect it to last long. Keep an eye out on our socials to be updated when we make it available for purchase online.

Lease Properties 🌲🌱🌱🐄🐄

We’ve wanted to lease more grazing land for our cattle for a while now but it wasn’t until it hadn’t rained for a while and our pasture just wasn’t recovering the way it should that we really started searching.

It didn’t take long before one of our neighbours agreed to allow us to graze our herd on their land. Shortly after that, a second neighbour was keen for us to move our herd to their land next.

Neither property has had animals grazing for a long time, and we’ve had the landowners and others in the local community express their gratitude for us reducing the fire hazard on the lease properties. Isn’t it just amazing!! We’re now managing around 350 acres of land regeneratively and without chemicals.

With this extra land, we’ll be able to continue growing our beef herd regeneratively, with confidence.

🐓 🐓 Chickens 🐓 🐓

We now have a standing order for day-old chicks - every 6-weeks we’ll be starting a new batch. We’re SO excited! Our first batch left the brooder and started on pasture last week and they’ll be ready for processing in mid-December.

You can now pre-order whole chickens for delivery in mid-December (you’ll find a link to our Farm Store at the bottom of this newsletter).

New Products Coming Soon 🥩🥓🍖

Our new pork boxes have been going down a treat! Everyone that’s tried one has given us amazing feedback (and many hunger inducing photos).

We’ve been wanting to reduce the minimum order quantity for our pork for a while. Now we can. Over the next few weeks, we’ll be adding to our online store new retail cuts like pork cutlets, chops, roasts, belly, etc. There’ll still be a minimum order value but you’ll have more choice and flexibility than ever before. These retail cuts will, generally, be freshly frozen to maximise quality and tastiness.
