LP's Smoked Streaky Bacon – Whole (Unsliced)
This is the bacon that’s developed a cult following at Carriageworks Farmers Market – the one that sells out fast and keeps people coming back for more.
Made from our pasture-raised Tamworth pork, cured with salt*, brown sugar, then smoked over Ironbark by LPs in Sydney. The result? Big flavour, rich aroma, and a texture you won’t find in supermarket bacon.
We’re selling these whole – unsliced – as we haven’t been able to get them cut yet. That means you’ll need to slice it yourself. A meat slicer is ideal, but a sharp knife and steady hand will get the job done.
Includes: 1x unsliced Bacon Belly (a.k.a streaky bacon or short cut bacon)
A word of warning: This bacon is extremely fatty. Smaller pieces (around 1kg) are closer to a 50/50 meat-to-fat ratio, while larger pieces run fattier. If you don’t like fat, this one’s not for you. But if you do? The fat is part of the magic – it’s packed with flavour.
In fact, use it twice. Fry your bacon, then save the rendered fat for another meal. It’s unbeatable as a cooking fat for vegetables or roast potatoes.
Ingredients: Our pork, salt, brown sugar, sodium nitrate*, smoked over Ironbark wood.
All of our pork products are from our own regeneratively produced, critically rare-breed pigs, born and raised entirely on our farm. This breed is smaller than more common heritage meat pigs and known for their high fat distribution and sweet flavour. They are pasture raised on spray-free pastures and given no antibiotics, hormones, drenches, vaccinations and we do not castrate our males (normally done by chemical castration). They eat a natural omnivore diet of grasses, bugs, mosses, barks and anything else they forage in their weekly rotated paddock. As pigs cannot survive on this alone, they are also provided a wheat and barley based ration. Our pork was nominated for the delicious. Harvey Norman produce awards 2024.
